Dom Ruinart 2010 Vintage Champagne 75cl inspired by Dom Thierry Ruinart, founder of the house. The 2010 vintage is made from the finest Chardonnay Grand Crus: 90% from the Côte des Blancs and 10% from the northern slopes of the Montagne de Reims.

Allowing the wine to breathe reveals a rich base, with notes of fresh fig tree leaf aromas mingling with notes of black tea and fresh spices. The flavours develop and grow in layers leading to a complex mouthfeel, continuing to a fresh finish enhanced by an elegant bitterness. The 2010 vintage has a seductive feel and is a grand chardonnay wine.

"The 2010 Dom Ruinart is truly epic. It’s also an eye-opening wine. And I do mean wine. Because the first impression is really of wine more than Champagne. The 2010 signals a major shift in philosophy as Dom Ruinart is now aged entirely under cork (rather than crown seal) as it was back in the early 1960s. Lemon peel, white flowers, mint, crushed rocks and white pepper all race across the palate, announcing a Champagne of stature, breed and pure class. All the elements build as the 2010 crescendos into its intensely saline, mineral-drenched finish. The low dosage of 4 grams per liter is perfectly judged.

I try to avoid the tired clichés that make comparisons with Burgundy, but it is impossible here. The best way I can describe the 2010 Dom Ruinart is that it tastes like a great Corton-Charlemagne with bubbles. Chef de Caves Frédéric Panaiotis has poured his heart and soul into Ruinart since arriving in 2007. He richly deserves all the accolades he will surely garner for this masterpiece, an achievement that is made all the more notable by the challenges of the growing season. "Really deep flavoured. Very obviously more depth of flavour and tension than the 2009 Dom Ruinart. The cork ageing does seem to enhance the savoury, reduced character reminiscent of white burgundy. Very long with lemon notes. A truly exciting wine that is still extremely youthful."

The start of the 2010 vintage was marked by a fresh spring with temperatures well below the ten-year average. These lower temperatures persisted until flowering and were the reason behind a delay of five days in the vine’s cycle.
The summer of 2010 actually started off well, neither too hot nor too cold, with a summer rainfall deficit of 25% compared to the 10-year average. Everything changed in mid-August as the grapes began to ripen with torrential rains (the equivalent of two months of rainfall) in the Champagne region. The extreme conditions of constant heat and humidity favoured the development of the Botrytis cinerea fungus, which particularly attacked the pinot noir and meunier grapes. Fortunately, chardonnay, less sensitive at this stage, was spared.
September was a milder month. Harvest began on September 15th and the optimal quality of the chardonnays was maintained until maturity at the end of the harvest.
Dom Ruinart 2010 pairs particularly well with dishes that also need time to develop deep and complex flavours. Salting, fermentation, smoking and slow cooking all echo the richness of its aromatic palate.

Dom Ruinart 2010 marks a major step in the winemaking process with the return of a once common practice: cork stoppers for ageing on lees. This process has been trialled by the cellarmasters of Ruinart since the 1998 vintage. On tasting these first trials ten years on, the difference was significant: the bottles with corks revealed tenser wine with an additional layer of complexity. Although cork is porous, over a long period of time, it remains extremely stable while metal caps allow small amounts of oxygen to continually enter the bottle. After manual disgorging, necessary for Champagne aged under cork, a tiny amount of liqueur is then added for roundness. With just 4 grams of sugar per litre, Dom Ruinart Blanc de Blancs 2010 is Extra Brut.
