Spanish wines have a very distinctive character due to the three broad climatic zones: the Northern and the North Western coast with moderate maritime climate, the East coast from Catalunya to Levante with a warm mediterranean climate moderated by altitude and the Maseta Central with a little sea influence due to encircling mountains. Heat and lack of water are the greatest challenges in Spain, however the distinctive flavours and character are clearly present in the final product.

The main black varieties are: Tempranillo, Garnacha Tinta (ie Grenache), Monastrell (ie Mourvèdre), Graciano, Cariñena (Mazuelo in Rioja), Mencia. The key white varieties with a pale colour and refreshing notes are: Verdejo, Albariño and Airén.
